Ingredients
For the chicken
2 tbsp gluten free flour, for dusting
1 tbsp herb and spice mix*
salt and freshly ground black pepper
2 eggs, beaten
2 tbsp lactose free milk
1.4kg/3lb chicken, jointed
oil, for frying
For the coating
3 tbsp cornflakes - whizzed in a food processor
2 tbsp gluten free flour
Method
Heat the oven to 180C**. Season the gluten free flour with the spice blend and some salt.
Combine the eggs with lactose free milk. Dust the chicken pieces with gluten free flour mix then dip in the eggwash.
Finally dip the chicken in the coating. In a large frying pan heat the oil and fry chicken gently to begin with, raising the temperature until it is as brown and cooked after 10-15 minutes.
Serve immediately with fries and fresh salad.
**If the chicken pieces are large, remove from the pan and place in an oven for a further 20 mins, or until the chicken is cooked through.
*For the herb and spice mix:
1/2 teaspoon ground cayenne pepper
1 teaspoon freshly ground cumin
1/2 teaspoon ground mace
1 teaspoon freshly grated nutmeg
1 teaspoon paprika
1 teaspoon freshly milled black pepper
1 teaspoon ground ginger
2 teaspoons crumbled dried oregano
2 teaspoons crumbled dried sage
2 teaspoons crumbled dried thyme
1 teaspoon salt
